Crispy Curried Bean Sprouts

Cook Time: 15 minutes

Ingredients:

  • ¼ cup mayo

  • 1 tbsp Sriracha 

  • 1 cup vegetable oil

  • ½ cup flour

  • ½ tbs baking powder

  • 1 tbsp curry powder

  • 1 tsp turmeric

  • 1 tsp mustard powder

  • ½ tsp salt

  • ½ cup milk

  • 2 cups Salad Cosmo Bean Sprouts

  • green onion for garnish, sliced* optional

Instructions:

  1. Prepare a plate lined with paper towels (this will be used to place the crispy bean sprouts on once cooked).

  2. Prepare the Sriracha mayo which will be used for dipping. Combine ¼ cup mayo and 1 tbsp Sriracha and mix well. Place in refrigerator until ready to use.

  3. Heat  a medium saucepan on high heat, until temperature reaches at least 325F.

  4. While the oiling is heating, prepare the batter. Combine flour, baking powder, curry powder, turmeric, mustard powder, salt, and milk  in a shallow bowl. Mix well.

  5. Once the oil  is heated, begin dipping small batches of Salad Cosmo Bean Sprouts into the batter and then fry in oil (chopsticks work well here)..

  6. Once golden and crispy, place fried bean sprouts on your paper-towel lined plate to absorb excess oil.

  7. Repeat steps 4 & 5 until all bean sprouts have been fried. 

  8. Serve plated with Sriracha mayo and any garnish you’d like.
